Cazenovia When it comes to Empire Brewing Company’s Cazenovia location, brewer Tim Butler is ready to let the real work begin on the proposed farm brewery complex.
“The design phase is pretty much done. The next step is to make this all start to happen,” Butler said.
Owner David Katleski presented a petition, for the village to annex 22 acres of land on Route 13 in order for a farm brewery complex to be added to the village water and sewage system, to the Cazenovia Village Board on July 31. The village trustees officially received and acknowledged the petition.
Butler is the man behind the beer at Syracuse’s Empire Brewing Company. As the brewer, Butler has a lot of say in how the brewery is constructed so that it runs well. He said the brewing equipment has been ordered, and Butler has set the layout for the brewery portion of the new location.
Other features of the location include, according to Butler, “a tasting room and a beer garden in the back.” He added that the place would be ideal for sampling beers or enjoying a pint.
“It’s not going to be a bar by any stretch,” Butler said.
The farm-brewery that Empire intends to construct on the 22 acre plot on Route 13 will grow ingredients for the beer that is brewed on site. This will create a beginning to end experience so that patrons can learn about the entire beer-making process.
“It’ll be cool to have some of our own ingredients, we can say this really is an estate beer…it’s going to be pretty unique,” Butler said.
The location will be just as focused on producing hops and malt and brewing as it is focused on serving the finished product. The new location will be able to brew beer at a capacity of 60,000 barrels per year. The intention is to take pressure off the brewery in Armory square as well as the Green Point Beer Works brewery in Brooklyn.
